
This week has been filled with great weather, food, and experiences! Sunday and Monday have been in the 70s and sunny which has been absolutely gorgeous. On Sunday, a group of us went to a local farmers market and it was so fun! I had some delicious baked goods and a refreshing smoothie as we laid out in the park and soaked up the sun.

I have really been taking advantage of good food this week. We went to a group dinner this past Thursday and I had the best shepherd’s pie I’ve ever had (sorry mom). And I’m super lucky that my internship reimburses lunch up to a certain amount so I have been exploring different places around Dublin that have all been really good. I am not the best cook at all, so it has definitely been nice to be having some more covered meals out. We have another group dinner this Thursday that I am really looking forward to!

Speaking of my internship, things have been going super well. I have gotten into the swing of things and actually have my first client I am working with. She called about corruption within the healthcare field in Ireland and I have been doing legal research on other similar cases in the past as well as giving her resources and legal options to continue her journey with. It has been extremely rewarding to hear that the help of Transparency International Ireland and the Speak Up Helpline is lowering her stress and anxiety and allowing her to feel more in control in the situation. Connecting people to the resources they need has always been important to me.

This week we traveled down the east side of Ireland to see three different castles and some really cute towns as we drove through fan favorite Cork as well. I love how in Europe they seem to have more colorful buildings than we do in the US. I always get so excited when I see so many pastel painted houses and I need to take a picture!

I also took some time to explore Dublin some more on my own since we didn’t have any plans on Sunday. After the farmers market, I went into the city, and I went around to St. Patrick’s Cathedral, Christ Church Cathedral, and Dublin Castle. All were absolutely beautiful, and I continue to be amazed with how European cities blend old architecture with modern buildings. This weekend I am traveling to a new country so I will get to continue to explore this fascination there. Stay tuned to next week to find out where I’m going – I’m super excited!
