Cassidy Cook: Ireland Week 7

Hiya! This week wasn’t as interesting as the other ones, but a good one nonetheless. Let’s get into it: 

After such a fun weekend in Belfast, I was definitely a little reluctant to start the work week again. This week we hosted a ton of super fun events, one of which included a new event called Morsels & Meaning with one of our members Sula. Sula is such a kind soul and I light up whenever I see her. She prepared five traditional Palestinian dishes which were all INCREDIBLE. They are super easy to make and extremely nutritious. Sula did a fantastic job sharing her knowledge of traditional Palestinian dishes and how to prepare them at home. Some of the dishes included: musakhan rolls, mutabal aubergine, dip foul bil zeit (fava bean salad), persian style lentil salad, and tahini and date syrup dip. Additionally, work itself was pretty standard. I had a lot to do, but it’s good to stay busy. Although with all of our schoolwork, it definitely has been getting a little stressful as the semester is rounding out. Amidst all the stress, one of my favorite members brought me and Siabella chocolates from one of the best chocolatiers in Dublin. They were soooooo good and were devoured almost immediately. While I am getting a bit ready to go home, I know that there will be so many things I will miss about this place. 

This weekend we went to the Hill of Tara, Trim, Loughcrew Passage Tomb, and the Hill of Uisneach. It was very history filled and extremely educational. It’s always super fun to hear about more of the folklore aspects of Ireland’s history, seeing as how it is so crucial to the culture. My good friend from Bucknell, Jordan, also came to Dublin for the weekend. Jenna, Jordan, and I all lived in the same hall together, so it was so refreshing to have a little McDonnell reunion. Hearing about the folklore made me appreciate my heritage and the richness that Ireland exudes. Seeing as how the United States is such a new country, it is nice to hear about the centuries long lore of where my original home is. Sharing that experience with friends makes it all the more better. I can’t wait to soak up all that the next few weeks have to offer, and prepare to go home. I can’t believe it.
